How should I freeze homemade soup, dal or curry in useful portions?

Freeze in clean, appropriately sized portions, label the date and protect against air exposure. Cool food safely before freezing, thaw and reheat according to food-safety guidance, and avoid refreezing food that has been handled unsafely.

Why it happens

Freezing slows microbial growth but does not sterilise food. Large containers freeze slowly, and repeated temperature changes can damage texture or allow unsafe handling.

How it works

Small portions freeze and thaw more evenly. Ice crystals and moisture movement can change texture, while freezing preserves food quality only within limits and does not remove hazards already present.
