Why does my vegetable curry release too much water?

Use the desired texture as the guide. If a dry or browned result is intended, avoid overcrowding and allow moisture to evaporate.

More that helps

If the dish is meant to be saucy, the released liquid may be useful; adjust the final seasoning only after the water content has stabilised.

Why it happens

Vegetable cells contain water that is released as heat softens the tissue. Some vegetables, such as gourds, tomatoes and leafy greens, have high water content. Crowding a pan can also lower its temperature and cause vegetables to steam in their own liquid rather than brown.

How it works

Evaporation removes excess water. Overcrowding reduces the rate of evaporation from the cooking surface, while the water released from vegetables temporarily keeps their temperature near the boiling point.
