How can I use the same fermented batter for more than one dish?
Choose a use that suits the batter's current consistency, sourness and strength. Avoid adding ingredients or changing the batter in ways that make cooking unreliable, and keep food-safety limits in mind.
Why it happens
One fermented batter can sometimes serve multiple preparations because the same fermented grain-and-pulse mixture can be cooked at different thicknesses or in different formats. Not every batter is interchangeable: composition, fermentation level and viscosity constrain its use.
How it works
Different formats expose batter to different thickness, surface area and heat transfer. A thin layer dries and crisps differently from a thick steamed or griddled layer, even when the starting batter is similar.
