How can I use leftover cooked rice in a traditional dish while handling it safely?

Cool rice promptly in shallow portions and refrigerate without unnecessary delay. Keep it cold until use, reheat thoroughly, and discard rice that has spent too long at room temperature or whose storage history is uncertain.

Why it happens

Cooked rice can support microbial growth if left warm or at room temperature for too long. Bacillus cereus spores can survive cooking and may grow during unsafe storage; some toxins are not reliably destroyed by reheating.

How it works

Rapid cooling limits the time in which surviving spores can grow and produce toxins. Reheating is not a reliable fix for rice that was stored unsafely.
