How can I use fermented batter before it becomes over-fermented?

If it has been safely handled and has no spoilage signs, choose a use that tolerates the current acidity and texture. Do not assume that all over-fermented batter can be corrected or that adding flour makes it safe.

Why it happens

Over-fermented batter may be more acidic, loose or structurally weak because microbes have continued metabolising sugars and the batter's network has changed.

How it works

Acid and gas production alter flavour and structure. A different use may accommodate those changes, but it cannot reverse spoilage or restore every lost structural property.
