Why does a traditional fermented preparation develop an unusual smell or appearance?
Compare with the normal appearance and smell of that specific food and consider the preparation and storage history. Discard food with unexpected mould, abnormal colour, putrid odour or other clear spoilage signs; do not taste it to test safety.
Why it happens
Unusual smells or appearance can result from the intended fermentation profile, but they can also signal contamination or spoilage. Different fermented foods have different normal aromas, so a single universal smell test is not possible.
How it works
Fermentation produces characteristic acids and aroma compounds, while unwanted microbes may produce other compounds or visible growth. Because sensory checks are imperfect, uncertainty should favour discarding.
