How can I tell whether leftovers should be discarded?

Discard food with mould, unexpected discoloration, abnormal odour, damaged packaging or unsafe storage history. Do not taste questionable food to test it, and do not assume reheating will make it safe.

Why it happens

Food may be unsafe even if it looks and smells normal, while some harmless changes in texture or aroma can occur during storage. Time and temperature history are therefore critical.

How it works

Some pathogens and toxins do not create obvious sensory signs. Visible spoilage is a reason to discard, but the absence of visible spoilage does not guarantee safety.
