How can I tell whether fermented batter has become too sour to use?

If it is simply more acidic than preferred and has been safely handled, consider whether a preparation can accommodate that flavour. Discard batter with mould, unusual discoloration, putrid odours or uncertain storage history.

Why it happens

Excessive sourness usually reflects continued acid production, but sourness alone cannot tell whether batter is safe. Storage conditions, unusual appearance and off-odours matter too.

How it works

Acid production changes taste over time, while spoilage may involve other organisms and compounds. Sensory cues can flag problems but cannot guarantee safety.
