How can I substitute one dal for another and adjust the cooking method?

Match the pulse to the desired texture and allow for different cooking requirements. Whole pulses usually behave differently from split, skinless dals.

More that helps

Reassess seasoning after the texture is correct.

Why it happens

Dals differ in seed size, skin, starch, protein and how quickly their cells soften. A replacement can change thickness, flavour and cooking time even when the quantity is the same.

How it works

Pulse structure and starch release determine how much the dal breaks down and thickens the liquid. Different pulses therefore do not behave as interchangeable units.
