How can I slow fermentation when the kitchen is very warm?
Use a cooler location or refrigerate once the desired fermentation has been reached. Check more frequently in hot weather and avoid assuming the same timing works year-round.
Why it happens
Warm conditions generally accelerate fermentation, increasing gas and acid production. Batter may become over-sour or lose structure if activity continues unchecked.
How it works
Temperature affects microbial growth rates. Cooling slows activity but does not instantly stop it, so storage time remains relevant.
