How can I scale a recipe up for a family without losing its taste or texture?
Scale the ingredients as a starting point, but monitor liquid, texture and seasoning during cooking. Use a vessel large enough for even heating and avoid overcrowding.
More that helps
Adjust salt and strong spices incrementally rather than assuming the final perception will be perfectly linear.
Why it happens
Doubling ingredients does not necessarily double cooking time or liquid needs. A larger pot has a different surface-area-to-volume ratio, takes longer to heat, and may evaporate at a different rate. Seasoning also behaves differently when a dish is more or less concentrated.
How it works
Heat transfer and evaporation are governed by geometry as well as quantity. Larger batches can heat more slowly and have different concentration changes, so sensory checks remain essential.
