How can I scale a recipe down for one or two people?
Use a smaller vessel when possible, measure carefully, and begin checking doneness earlier. Treat time as a guide, not a fixed fraction of the original.
More that helps
Keep seasoning adjustments small until the final consistency is clear.
Why it happens
Small batches can evaporate quickly, may not cover the base of a large pan evenly, and can be difficult to judge by the same timing used for a family-sized quantity. A small error in seasoning can also be more noticeable.
How it works
The pan's geometry and heat exposure do not shrink in proportion to the food quantity. A smaller amount may cook faster in one vessel but unevenly in another.
