Why does my roti tear while rolling?

Assess dough flexibility before rolling. Allow more resting if it feels tight, use even pressure, and avoid forcing a dry or cracked edge to stretch thin.

Why it happens

Roti may tear when the dough is too dry, insufficiently rested, unevenly kneaded, or rolled with uneven pressure. Coarse whole-wheat flour and a high bran content can interrupt the gluten network.

How it works

Gluten provides extensibility and cohesion. Hydration and resting help the dough stretch more evenly; bran particles can physically interrupt the network, making some flours less elastic.
