Why does my roti become hard, and how can I keep it soft?
Check whether the dough feels dry or tight, allow adequate resting time, and avoid prolonged cooking after the roti is done. Keep cooked rotis covered in a clean cloth or suitable container without trapping excessive condensation.
Why it happens
Roti becomes hard when too much moisture is lost, the dough is under-hydrated or insufficiently rested, or the bread is cooked too long or too slowly. Flour type and bran content also affect how much water the dough can hold.
How it works
Water hydrates flour proteins and starch; resting lets moisture distribute and gluten relax. Excessive heating drives out moisture, while trapped steam can soften the bread but may make it damp if condensation accumulates.
