How can I rescue a curry that has become too sour?
Dilute with unsalted ingredients or liquid that suit the dish, or add more of the main unsalted components. A small amount of a naturally sweet ingredient may round the flavour in some curries, but it can change the character of the dish.
More that helps
Do not add large quantities of sugar automatically.
Why it happens
Acidity may come from tamarind, tomato, yoghurt, kokum, lemon or fermentation. The sourness can seem especially sharp if the dish lacks enough body, salt or aromatic complexity, but the correct balance depends on the intended style.
How it works
Dilution lowers acid concentration; sweetness and salt can alter how sourness is perceived. They do not chemically remove all the acid, so choose an adjustment that preserves the dish's intended flavour.
