How can I prevent a dish from becoming dry while reheating it?

Use a covered container suitable for the heating method, add a little water or suitable liquid when the dish can absorb it, and stir partway through reheating where appropriate. Heat until the food is steaming hot throughout, especially leftovers containing rice, dal or gravy.

Why it happens

Reheating causes water to evaporate, and starch-rich foods may firm up as starch molecules realign during cooling. Microwave heating can be uneven, while thick foods may have hot edges and a cooler centre.

How it works

A cover limits moisture loss; added liquid replaces some water lost during storage; stirring redistributes heat. Reheating improves texture but does not make food safe if it was stored improperly in the first place.
