How can I prevent the aroma of fresh herbs from disappearing during cooking?
Use hardy herbs earlier if their flavour needs to infuse the dish; reserve delicate herbs for near the end or serving when appropriate. Avoid storing cut herbs exposed to air for long periods.
Why it happens
Fresh herbs lose aroma because many of their fragrant compounds are volatile and heat-sensitive. Chopping can release aroma quickly, while prolonged cooking allows more of it to escape.
How it works
Volatile compounds evaporate during heating and exposure to air. Timing the addition closer to serving preserves more of the fresh aroma in the finished dish.
