Why does my paratha cook unevenly or remain raw in the middle?
Check thickness and filling distribution, and use moderate heat that allows the inside to warm before the exterior becomes too dark. If the outside browns rapidly, lower the heat rather than simply cooking longer at the same intensity.
Why it happens
A paratha can cook unevenly when it is too thick in some places, contains a damp or clumped filling, or is cooked over heat that browns the outside before the centre heats through.
How it works
Heat travels inward from the surface. Thick or uneven areas take longer to heat; wet filling can also create steam and local temperature differences.
