Why does my one-pot meal burn before the grains or pulses are cooked?

Check whether the cooking liquid is being absorbed or escaping as steam. Use a lower, steadier heat after bringing the dish up to temperature, and ensure that the cooking vessel and liquid quantity suit the ingredients.

More that helps

If the base has burnt, do not scrape it into the food.

Why it happens

The liquid may evaporate before the ingredients have softened, the heat may be too high, or the pot may concentrate heat at the base. Different ingredients need different amounts of water and time. A thick mixture can also prevent convection, leaving hot spots.

How it works

Grains and pulses need water and time to soften. Once the free liquid disappears, the bottom can rise well above the boiling point of water and burn while the centre remains undercooked.
