How can I make a small quantity of food without it drying out?
Use a vessel suited to the batch size, moderate the heat, and use a lid when the food benefits from retained steam. Check liquid levels earlier than you would for a larger batch.
More that helps
Avoid scaling down time and liquid in a simple linear way without considering the pan.
Why it happens
A small portion has a different ratio of exposed surface area to food volume than a large batch. In a wide pan, liquid can evaporate quickly relative to the amount of food. A burner that is too powerful for the vessel can also create hot spots.
How it works
Evaporation depends on exposed surface area, airflow, temperature and the vessel, not only on the quantity of ingredients. A smaller batch in the same wide pan may lose moisture disproportionately quickly.
