How can I make rice and dal together without one becoming mushy?

Choose a combination whose cooking times are compatible, or use a method that accounts for the difference in size and texture. The desired endpoint also matters: a creamy khichdi tolerates more breakdown than a dish in which separate grains are wanted.

Why it happens

Rice and pulses do not soften at the same rate. Split dals often cook faster than whole pulses, while some grains absorb water and break down readily. If the cooking time is set for the harder ingredient, the softer one may overcook.

How it works

Each ingredient has its own water uptake and softening curve. Matching ingredients and method reduces the gap between their endpoints; there is no single timing that works for every grain-and-pulse pairing.
