How can I make a recipe milder without removing all its flavour?
Reduce the source of heat or separate it from the shared base, then build flavour through compatible aromatics, seasoning and contrast. Avoid compensating automatically with excess salt or sugar.
Why it happens
Mildness is not the same as lack of flavour. Chilli heat can dominate other qualities, while aroma, acidity, savouriness and texture provide independent sources of interest.
How it works
Capsaicin creates a heat sensation through sensory receptors; aroma and basic tastes operate differently. Removing some chilli heat leaves room for other flavour dimensions to be noticed.
