How can I make a pulse-based dish smoother without losing all its texture?
Mash or blend only a portion when a mixed texture is wanted, and adjust liquid after assessing the result. The ideal smoothness depends on the pulse, dish and preference.
Why it happens
A pulse dish becomes smoother when the pulses break down and disperse into the liquid. If everything is mashed or blended, however, the dish loses the contrast of intact pulses.
How it works
Dispersed pulse solids thicken the liquid; intact pulses provide bite. Using both states allows body and texture contrast in the same dish.
