How can I make an overly spicy dish milder without making it bland?
Dilute with more of the main ingredients or a suitable unsalted base. Depending on the dish, a dairy ingredient or a little fat may soften the perception of chilli heat, while acidity and sweetness can rebalance the flavour.
More that helps
Serve with a mild accompaniment if changing the main dish would damage its character.
Why it happens
Capsaicin, the compound responsible for much chilli heat, activates heat-sensitive receptors. Its sensation is not simply cancelled by adding more spices. The apparent intensity also depends on chilli variety, amount, distribution and the other ingredients in the dish.
How it works
Capsaicin is fat-soluble and interacts with sensory receptors differently from ordinary taste compounds. Adding more food reduces its concentration per bite; dairy proteins and fat can also alter the experience. Water alone often provides only temporary relief.
