How long can cooked rice safely remain at room temperature?

Cool rice promptly, refrigerate it without delay and keep it cold until use. Follow authoritative local food-safety guidance and discard rice that has been left out too long or has uncertain storage history.

Why it happens

Cooked rice can support growth of Bacillus cereus if it is held warm or at room temperature too long. Spores may survive cooking, then germinate and multiply under favourable conditions.

How it works

Rapid cooling and refrigeration limit bacterial growth and toxin formation. Reheating may kill some bacteria but does not reliably destroy toxins that may already have formed.
