Why does my khichdi turn gluey, and how can I improve its texture?
For a batch that is already gluey, it is usually better to accept the soft texture and serve it as a porridge-like preparation than to try to reverse it. For future batches, use a little less water or cooking time, stir less once the grains soften, and consider the starch behaviour of the grain being used.
Why it happens
Khichdi is meant to be soft, but it becomes gluey when grains and pulses release excess starch, absorb too much water, break apart from prolonged cooking or vigorous stirring, or are held hot for a long time. Grain variety and the proportion of dal to rice also influence the final texture.
How it works
Cooked starch thickens liquid, and damaged grains release more starch. Cooling can further firm starch-rich foods through retrogradation, in which starch molecules partly realign.
