How can I keep the flavour balanced when increasing a recipe's quantity?
Scale quantities as a starting point, then taste and adjust gradually. Ensure the vessel allows even heating and enough room for stirring.
More that helps
Use texture and flavour cues rather than assuming every dimension doubles exactly.
Why it happens
Scaling up a dish changes vessel size, heating time, evaporation and the surface area exposed to air. Seasoning intensity does not always scale in a perfectly linear way, especially with potent spices and salt.
How it works
Heat transfer and evaporation depend on pot geometry and batch depth. A larger batch may take longer to reach temperature and may lose water at a different rate, changing concentration.
