What can I do if I have too much fermented batter left?

Refrigerate promptly if it is still safe, label when it was made, and prioritise using it within a suitable storage period. Select a use that fits its current sourness and texture; discard it if there are signs of spoilage.

Why it happens

Too much fermented batter can become more sour and may lose some structure as fermentation continues. Refrigeration slows but does not instantly stop microbial activity.

How it works

Microbial activity slows at low temperatures but continues to some degree. Time and temperature therefore influence both flavour and safety; a smell test alone cannot prove safety.
