What should I do if batter ferments unevenly?

Keep the batter in a suitable clean container, avoid large temperature swings and observe the whole batch rather than just the surface. Mix only as appropriate for the batter and stage; unnecessary agitation can release gas.

Why it happens

Uneven fermentation can occur when temperature varies across the container, the batter is not homogeneous, the container is too deep or the microbial activity is uneven.

How it works

Microbes and heat are not always distributed evenly. Local differences create variation in gas production and acidity, while mixing can redistribute the batter but also remove some trapped bubbles.
