Why do my idlis become sticky or gummy after steaming?

Check doneness and let steam dissipate briefly before removing the idlis. If gumminess recurs, review batter consistency and the rice/dal balance rather than automatically extending steaming indefinitely.

Why it happens

Sticky or gummy idlis may result from excess moisture, a batter with too much free starch, insufficient steaming, or being left in a humid steamer after cooking.

How it works

Heat and time determine how starch gelatinises and the interior sets. Excess surface moisture can make idlis feel sticky, while an unsuitable batter structure can remain gummy even after steaming.
