Why does my idli batter rise but produce flat idlis?
Check whether the batter has become watery or separated and handle it gently before steaming. Also review whether the rise is uniform and whether the batter is already over-fermented.
Why it happens
Batter can rise but still make flat idlis if gas production is not retained, the batter is too loose, bubbles are knocked out during handling, or the structure is unable to hold the expanding gas.
How it works
Fermentation produces gas, but rise alone does not guarantee a strong bubble network. The batter must retain gas until heat sets its structure; weak or overextended structure allows bubbles to escape or collapse.
