Why does my homemade food taste different each time I make the same recipe?

Keep track of the few variables that matter most for the dish: ingredient type, approximate quantities, cooking method, elapsed time, texture cues and the final adjustment. Change one major variable at a time when trying to improve consistency.

Why it happens

A written recipe cannot capture every variable: ingredient variety and age, water hardness, piece size, pan material, flame strength, humidity, cooker pressure, evaporation, fermentation activity and your own sensory judgement all vary. "One cup" and "three whistles" are not perfectly reproducible measures across kitchens.

How it works

A simple record helps distinguish a repeatable cause from coincidence. Sensory cues, such as grain tenderness, batter rise or the smell of a cooked spice base, often transfer better across equipment than a time-only instruction.
