Why does homemade curd become too sour, and how can I adjust the next batch?
For future batches, chill the curd once it has set and adjust incubation conditions. If an existing batch is safely stored but sour, it may suit a preparation where sour curd is appropriate; do not use it if spoiled.
Why it happens
Curd becomes too sour when acid-producing bacteria continue fermenting lactose, particularly when the curd remains warm after it has set. Starter strength and incubation temperature affect the speed.
How it works
Cooling slows bacterial activity. Acid continues to develop while the bacteria remain active, so prompt refrigeration helps limit further souring.
