Why does my dosa turn soft instead of crisp?

Consider whether the desired style is thin and crisp or thick and soft. For crispness, thickness, moisture loss and surface temperature matter; avoid stacking hot crisp dosas in a way that traps steam.

Why it happens

A dosa may remain soft because it is thick, contains more moisture, is removed before enough water evaporates, or uses a batter composition that produces a softer structure. Steam trapped after cooking can also soften it.

How it works

Crispness develops as moisture leaves and the cooked starch-protein structure dries. A moist centre or trapped steam keeps the structure flexible.
