Why does my dosa tear when I try to lift it?
Wait until the underside has set and releases naturally, and check that the batter spreads evenly. If tearing is repeated, reassess surface heat, batter consistency and tawa condition.
Why it happens
Dosa tears when it is too thin before it has set, the batter does not form a coherent layer, the surface is sticky, or the dosa is lifted too early.
How it works
As the batter heats, starches gelatinise and the layer gains strength. Before this structure sets, lifting creates stress that the wet batter cannot withstand.
