Why does my dosa stick to the tawa?
Check that the surface is clean and at a suitable, steady temperature. Let the dosa set before trying to lift it, and assess batter consistency and the condition of the tawa if sticking recurs.
Why it happens
Dosa sticks when the tawa surface is unsuitable, too hot or too cool, when the batter's consistency is wrong, or when the dosa is moved before its underside has set. Residues and seasoning also affect release.
How it works
Sticking depends on contact between wet batter and the cooking surface, followed by starch and protein setting. A stable surface and sufficient setting time allow the dosa to release more readily.
