Why does my dosa remain pale instead of turning golden?
Check the heat and thickness and allow the surface to cook to the desired texture. Do not simply raise heat dramatically: a very hot tawa can burn spots while leaving other areas undercooked.
Why it happens
A dosa can remain pale if its surface has not dried enough, the cooking temperature is low, the batter composition browns less readily, or the dosa is removed before sufficient surface reactions occur.
How it works
Golden colour comes from browning reactions and surface drying. Moist surfaces remain near water's boiling point for longer, limiting browning until enough moisture evaporates.
