Why has my dosa or idli batter failed to ferment?

Consider temperature, elapsed time, batter consistency and the reliability of the usual process. Keep equipment clean, but remember fermentation is a biological process and timing can vary; do not leave batter indefinitely in warm conditions hoping it will recover.

Why it happens

Batter may fail to ferment because the microbial community is weak, the temperature is too low, the batter is too salty or otherwise unsuitable, or the ingredients and equipment introduce too few active microbes. Cold weather slows fermentation substantially.

How it works

Fermentation depends on microbial activity, which is affected by temperature, available nutrients, acidity and competition from other organisms. A fixed overnight time cannot guarantee the same result in every kitchen.
