Why does my dosa batter refuse to spread into a thin circle?

Assess consistency and grinding texture, and test the temperature with a small amount before spreading a full dosa. Avoid assuming that every alternative-grain batter will spread exactly like a familiar rice batter.

Why it happens

Batter may not spread because it is too thick, too coarse, insufficiently fermented, or being spread on a tawa at an unsuitable temperature. Some grain and millet batters behave differently from rice-based batter.

How it works

Spreadability depends on viscosity, particle size and how quickly the batter begins setting on contact with the hot surface. A surface that sets batter immediately prevents it from moving; an overly thick batter resists spreading.
