When should I discard a fermented food instead of trying to rescue it?
Do not try to rescue questionable food by scraping off visible mould, reheating or adding spices. Follow a tested method for the particular fermented food, and discard it if the process or storage conditions were unreliable.
Why it happens
Fermented food should be discarded when there are signs of mould not expected for that food, unusual discoloration, putrid or otherwise abnormal odour, unsafe storage, or uncertainty about whether a safety-critical process was followed.
How it works
Some hazards and toxins may not be visible or destroyed by ordinary reheating. Smell and appearance can detect some spoilage but cannot certify safety.
