How can I coordinate the cooking times of rice, pulses and vegetables in one pot?
Plan around the ingredient that takes longest, and use combinations with compatible endpoints. Where the cooking method permits, ingredients can be introduced at different stages, or some components can be cooked separately and combined near the end.
More that helps
The intended texture (soft khichdi or distinct grains) should guide the choice.
Why it happens
Rice, split dal, whole pulses and vegetables differ in size, water uptake, cell structure and heat-transfer requirements. The shortest-cooking ingredient may become mushy while the slowest is still firm.
How it works
Heat does not soften every ingredient at the same rate. Separating the cooking stages when needed allows each ingredient to reach its endpoint without forcing all of them to endure the same duration.
