How can I adjust the final taste of a dish after adding vegetables that release water?

Allow the moisture level to settle before making final seasoning decisions. If the dish is too thin, consider reduction or body from suitable cooked ingredients; if it is balanced and intended to be saucy, the liquid may be part of the result.

Why it happens

Water released by vegetables dilutes seasoning and can change the sauce's texture. If seasoning is adjusted before the liquid stabilises, the dish may become too salty or intense after further evaporation.

How it works

Water changes the concentration of salt, acids and aromatic compounds. Evaporation later increases their concentration, which is why final seasoning is best judged near the end.
