How can I adjust the consistency of a dish just before serving?

Decide whether the dish needs dilution, reduction or more body. Add liquid gradually to loosen it; allow evaporation if it is too thin; or mash/blend suitable cooked ingredients to add body.

More that helps

Re-taste after changing consistency because dilution and reduction both change seasoning concentration.

Why it happens

A dish's consistency changes with evaporation, starch release, cooling and the amount of solid material suspended in liquid. It may be thinner while very hot and thicken as it stands, especially if it contains rice, dal or flour-like starches.

How it works

Liquid quantity and suspended solids determine viscosity. Starch-rich foods can thicken as they cool, so judge the consistency close to the temperature at which the dish will be served.
