How can I adapt a rice recipe for a pressure cooker?
Use guidance designed for the specific rice and cooker, rather than transferring the open-pot water ratio or timing unchanged. Treat whistles cautiously: they are not a universal unit of cooking time.
More that helps
Account for the time under pressure and the residual cooking that occurs during pressure release.
Why it happens
A pressure cooker cooks at a higher temperature than an open pot because pressure raises water's boiling point. It also reduces evaporation, so the liquid requirement and cooking time differ from an open-pot method. Cooker pressure, rice variety, batch size and the time needed for pressure to build and release all matter.
How it works
Higher temperature speeds cooking, while the sealed environment retains more water. A cooker that is fuller or contains a different amount of liquid can behave differently from the same cooker with a small batch.
