How can I adapt a recipe when I have more vegetables than the recipe requires?
Consider whether the extra vegetables will need more cooking time or whether the dish needs a larger base. Delay final seasoning until the liquid level stabilises, and avoid overcrowding a pan when browning is intended.
Why it happens
Extra vegetables release additional water and increase the amount of solid material in a dish. The original cooking time and seasoning may no longer be sufficient.
How it works
More vegetable tissue means more moisture and a greater heat load. The pan may cool and steam rather than brown, and the additional water dilutes the seasoning.
