How should I adapt batter fermentation when the weather is cold?
Use a consistently warm but not excessively hot location and allow for slower progress. Observe the batter's rise, aroma and texture rather than following a fixed overnight schedule.
Why it happens
Cold weather slows the growth and metabolic activity of fermenting microbes, so batter that ferments quickly in warm weather may take longer in winter.
How it works
Microbial activity has a temperature range in which it proceeds efficiently. Too little warmth slows fermentation; excessive heat can favour undesirable organisms or damage the culture.
