Create / Ingredients / Fenugreek (methi)

Fenugreek (methi)

Bitter when raw, nutty and maple-like when lightly roasted. The dried leaves taste savoury and grassy. Small, hard seeds, or crumbly dried leaves (kasuri methi). Also called Methi, Vendhayam, Menthya.

Preparing it

Use only a pinch. Roast or temper gently, because burnt fenugreek turns very bitter. Crush dried leaves between your palms before adding.

Goes with

Curd, Tamarind, Lentils, Tomato

Season

Fresh methi leaves are best in winter. Seeds and dried leaves are available all year.

Storage

Keep seeds and dried leaves in airtight jars away from light.

Safety

If you are pregnant, or take medicine for diabetes or blood thinners, ask a doctor before eating fenugreek in large amounts. Demo wording, to be reviewed.

Nutrition

Used in small amounts, so its nutritional contribution is minor. Demo note.

Tradition

A few fenugreek seeds go into idli and dosa batter in many South Indian homes, and kasuri methi is a familiar finish for North Indian dals and curries.
